The prix fixe menu at Carversteak starts at $99 per guest, not including tax and gratuity. Diners can choose from a variety of first course options such as Caesar salad, wagyu beef skewers, Korean glazed pork belly, or seared Hudson Valley foie gras, which incurs an additional charge of $34. For the main course, guests can select from filet of ribeye, Atlantic salmon, or jidori chicken breast. A dessert option of crème brûlée is also available.
Flanker Kitchen offers a more affordable prix fixe menu beginning at $39 per person. First course choices include Caesar salad or crispy pork belly. Main course options consist of wagyu bacon smash or Atlantic salmon, and the dessert menu features Pineapple Dole Whip. To access these exclusive menus, local residents are required to show their Nevada ID.
In support of the ProStart Program, each meal purchased from either Carversteak or Flanker Kitchen will contribute $4 towards culinary education. This initiative highlights the restaurants’ commitment to fostering the next generation of culinary talent in Nevada.
In addition to these new offerings, Las Vegas is anticipating the opening of a new venue, Carbone Riviera, set to debut this fall in the former Picasso space at Bellagio. The restaurant is developed by Major Food Group, known for the original Carbone restaurant located in New York City. Carbone Riviera will feature a grand seafood display with options flown in daily.
Guests will experience a redesigned interior, an extended terrace, and a unique dock designed for a 33-foot mahogany mini yacht. This yacht will provide diners with an intimate view of the iconic Bellagio Fountains, enhancing the overall dining experience.
