Dining scene at Las Vegas restaurants featuring prix fixe menus

News Summary

Two notable restaurants on the Las Vegas Strip, Carversteak and Flanker Kitchen + Sports Bar, have introduced exclusive prix fixe menus for Nevada residents. These dining options are designed to support the Nevada Restaurant Association’s ProStart program, which aids culinary education for high school students. The menus, available throughout summer, encourage locals to enjoy fine dining while contributing to educational initiatives. Additionally, the upcoming opening of Carbone Riviera promises to elevate the culinary landscape further.

Las Vegas – Two prominent restaurants on the Las Vegas Strip, Carversteak at Resorts World and Flanker Kitchen + Sports Bar at Mandalay Bay, have launched exclusive prix fixe menus for Nevada locals. This initiative is designed to benefit the Nevada Restaurant Association’s ProStart program, which provides culinary and hospitality training to high school students. The menus will be available throughout the summer, encouraging local residents to enjoy fine dining while supporting educational opportunities for youth in the state.

The prix fixe menu at Carversteak starts at $99 per guest, not including tax and gratuity. Diners can choose from a variety of first course options such as Caesar salad, wagyu beef skewers, Korean glazed pork belly, or seared Hudson Valley foie gras, which incurs an additional charge of $34. For the main course, guests can select from filet of ribeye, Atlantic salmon, or jidori chicken breast. A dessert option of crème brûlée is also available.

Flanker Kitchen offers a more affordable prix fixe menu beginning at $39 per person. First course choices include Caesar salad or crispy pork belly. Main course options consist of wagyu bacon smash or Atlantic salmon, and the dessert menu features Pineapple Dole Whip. To access these exclusive menus, local residents are required to show their Nevada ID.

In support of the ProStart Program, each meal purchased from either Carversteak or Flanker Kitchen will contribute $4 towards culinary education. This initiative highlights the restaurants’ commitment to fostering the next generation of culinary talent in Nevada.

In addition to these new offerings, Las Vegas is anticipating the opening of a new venue, Carbone Riviera, set to debut this fall in the former Picasso space at Bellagio. The restaurant is developed by Major Food Group, known for the original Carbone restaurant located in New York City. Carbone Riviera will feature a grand seafood display with options flown in daily.

Guests will experience a redesigned interior, an extended terrace, and a unique dock designed for a 33-foot mahogany mini yacht. This yacht will provide diners with an intimate view of the iconic Bellagio Fountains, enhancing the overall dining experience.

The opening of Carbone Riviera comes following the closure of Picasso, which had been in operation for more than 25 years. The transformation of this dining space allows for a fresh approach to high-end cuisine in Las Vegas. The menu at Carbone Riviera will feature whole fish preparations, signature dishes from the original Carbone, and a distinctive selection reflecting the Italian coastal dining experience.

The restaurant aims to blend elegance with an aura of abundance, promising a dining experience reminiscent of the Amalfi Coast. Carbone Riviera is part of a larger trend on the Las Vegas Strip, which has seen an increase in high-profile restaurant openings seeking to enhance the culinary landscape of the area. With new dining options and initiatives supporting local education, these developments reflect the vibrant and evolving nature of Las Vegas’s restaurant scene.
