Las Vegas, NV – A new seafood restaurant named Pisces is set to open its doors at Wynn Las Vegas on May 10. This dining establishment takes over the former Lakeside location and showcases an elegant redesign that complements its Mediterranean-inspired theme.
Pisces features a delightful dining room with views overlooking the Lake of Dreams, which includes enchanting animatronic birds and a singing frog, creating an immersive dining atmosphere. The restaurant will be under the guidance of Executive Chef Martin Heierling, who has a noteworthy culinary background, having previously worked at Sensi in Bellagio and Silk Road in Vdara.
The menu at Pisces highlights rare seafood options, such as blue lobsters, which will be served chilled in a chimichurri sauce and a spicy pepper sauce. In addition to these lobsters, guests can delight in a selection of whole fish, including branzino and dorado. The availability of bluefin tuna will depend on market conditions. Each fish will undergo a dry-aging process for three to four days to enhance its flavor profile.
Pisces also features a range of in-house made pasta, aside from a spaghetti crafted from heirloom grains sourced from Tuscany. Other notable menu items include salt-baked loup de mer, grilled lamb chops, and a variety of extensive seafood platters. The restaurant’s bread service will offer a unique laminated sourdough sfogliato bread, which is complemented by feta and eggplant dips.
The décor of the restaurant incorporates dark navy tones, intricate Italian stone mosaics, and features a two-level bar with expanded seating for guests. The bar opens at 4:30 p.m., and offers an innovative cocktail menu curated by Wynn’s master mixologist, Mariena Mercer Boarini. Among the drink options, unique choices like yogurt-washed punches stand out.
For those with a sweet tooth, Executive Pastry Chef Jennifer Yee has developed an array of whimsical desserts, including a novel fish-shaped dessert filled with chocolate. Pisces emphasizes a focus on Mediterranean flavors while still retaining some iconic seafood selections from its predecessor, Lakeside.
The restaurant will be in operation every night, with dinner service commencing at 5 p.m. Reservations can be made online on the Wynn Las Vegas website. The opening of Pisces comes in response to the increasing popularity of seafood dining experiences over the last decade, reflecting a growing trend in culinary preferences.
